Black Bean BrowniesMaybe technically not a food that nourishes and restores gut health. However a very good case can be made for a sweet treat that is super delicious and good for you.
And these are just that. Low glycemic (with the right sugar substitute), gluten free, dairy free and full of the goodness of black beans. 1 can organic black beans 3 eggs 1/3 cup coconut oil 1 tsp of vanilla 1/2 cup sugar or 1:1 sugar substitute (monk fruit is a good option) 1/2 cup unsweetened cocoa powder 1/2 tsp baking powder 1/4 tsp salt 1/2 cup dark chocolate drops (check ingredients for dairy free). |
Preheat the oven to 180 C.
Open, drain and rinse your black beans and leave them to drain. You don't want them to be too wet or you will end up with a liquid instead of a paste.
Choose a backing dish 8 x 8 inch or 9 x 9 inch will work, or a variation of. Grease your dish or line with baking paper.
Pop your black beans into the food processor and blitz into a rough paste. Add in coconut oil, eggs and vanilla. Blend again until combined.
In a separate bowl whisk together cocoa powder, sugar substitute, baking powder and salt. Once they are combined, add these to the wet ingredients in the food processor. Blend until just combined.
Poor the mixture into your prepared baking dish and cover with the chocolate chips. Into the oven they go. Depending on your dish size, they will take 30-40 minutes to cook. An 8 x 8 dish will take a little longer than a 9 x 9 dish. Poke a clean knife into the centre, when it comes out just clean they are ready (or if you like them more fudgy, a bit of stick on the knife is okay).
Let them cool before slicing and serving. If there is any left, they are actually even better the following day.
